Vegan Peanut Butter Banana Smoothie
Smoothies are must-have staples in Southern California in summer. This time of year is when our smoothie making is in full swing. Every day – a new flavor and texture. Normally by October, hot beverages slowly replace cold drinks, but not this vegan peanut butter banana smoothie.
We’ve been drinking it every afternoon without skipping a day. Creamy, rich in flavors, protein, and antioxidants, without a trace of processed sugar, it’s the best snack you can give to yourself and your kid when you need that extra boost of energy.
PEANUT BUTTER BANANA SMOOTHIE (VEGAN)
Yields: 3 servings (tall glasses)
Ingredients
- 2 ripe bananas
- 5-8 Medjool dates
- 1-2 tbsp peanut butter
- 1/2 – 1 glass plant-based milk (use less milk for thicker consistency)
- 2/3 tall glass ice cubes
Instructions
- Add all ingredients in a high-speed blender and blend until well combined and smooth. Make sure the ice has crashed, but is not liquidized. The tiny particles of ice add a special texture and an ice-cream-like consistency to your peanut butter banana smoothies.
- Serve in tall glasses and enjoy immediately!
Tips
- You can substitute peanut butter for any other nut or seed butter of your choice. I feel like bananas and peanut butter go together like bread and butter. It’s a classic combination that yields an unmatched taste and texture.
- You can omit ice or substitute it for plant-based milk. Your peanut butter banana smoothie will be thinner, truly smoothie-like, and far from looking like ice cream in a glass. Nevertheless, it tastes as divine as the thicker version.
